Castellana or Garlic soup, one of the most typical recipes of our Gastronomy.

For the Soup:

We make a broth with onions, leeks, dry red pepper, chilli and garlic, letting it cook about half an hour. Once the broth is made we extract peppers, chilli and garlic. We remove the meat from the peppers and the chilli.
Pass through the mixer the meat extracted along with the garlic and a little broth, obtaining a cream that we will add to the soup after.
We put oil to heat in the pan and we sauté the chopped bread, we are adding the broth bit by bit, and then add the cream that we have made and salted.
Stir the bacon separately and add.
Poach one egg per person about 5-minutes and is ready to serve.
